Les Hermaux is a small village outside time, nestled in the foothills of the Aubrac in Lozère and overlooking the Lot valley. The Hotel Vergnet has been welcoming guests since the 1930s. The great grandfather of the present owner opened this café-inn and his son, his grandson and now his great grandson have taken over the reigns. The culinary tradition of Lozère is given prided and place and in particular the king of local specialities: aligot, made with potatoes and fresh tomme cheese.
