Laurent THOMAS and Patricia GRIMIGNI are installed since 1998 and have a sheepfold of 300 ewes of Lacaune on 65 hectares of meadow. Everything is done by hand (milking, cheese), even the barley for the animals is grown by them. The products are labeled organic since December 5, 2016 after 3 years of conversion. Products for sale on the market of Lavaur on Wednesday and Saturday morning and Chez Xavier in Toulouse.

Spécialités : pâte molle (le Perail vendu sous le nom de Cant’Auriol, Lou Pastre) ; pâte pressée (tomme sous différents formats) ; fromages frais coeur, carré, rond (type fromages de chèvre).
