Since 1989 the Aparis family have been welcoming customers into the heart of the mediaeval village of Collias. The Hostellerie Le Castellas occupies three 17th century buildings imbued with Languedoc charm. In the stone vaulted dining room of the restauarant you can enjoy the specialities of chef Jérôme Nutile.
