Like a fashion designer, Alain PASSARD weaves his menu following the seasons, and only serves his guests vegetables and herbs from his garden, grown in a natural way by his team of gardeners. Exposing himself to the hazards of nature, he strives to serve only produce with an authentic, powerful and pure flavour. Alain PASSARD frees himself often from the constraints of the menu; he improvises… And always surprises.
