Pierre OTEIZA is a farmer in the Aldudes valley. He raises black and white Basque pigs on his mountain farm and transforms them. He is a salting craftsman and air-dries our hams from the Aldudes valley, hams and KINTOA PDO meat, ventrèche, jesus, chorizos, and sausages in our drying rooms. He elaborates cooked dishes of the Basque Country, pâtés, and markets cheeses of ewe Ossau Iraty AOP, pepper of Espelette AOP, wines of Irouleguy AOP and jams. In the store, ready-to-eat trays and gift boxes are available as well as sandwiches filled with our delicious hams, foies gras and cheese. In St Miche, a seminar room is available upstairs (about 50 people). A second Pierre OTEIZA store is open in Paris 13 rue Vignon 75008 Paris Madeleine (01 47 42 23 03).
